Sweet fennel, harvested when the umbels have turned grey-green but before the seed shatters. Sold whole rather than ground — the oil sits in the seed coat and starts leaving the moment it is broken.

Traditional use

Traditionally given for bloating and wind after meals, and used as a mild tea for children.

    Bruise the seed in a mortar just before brewing. Whole seed gives you coloured water and little else.
