Picked as whole heads in the first dry week of June, when the receptacle has domed but the white ray florets still stand out flat. Dried in shade at 40 °C so the volatile oil stays in the flower rather than in the drying room.

Traditional use

Traditionally taken after meals for a settled stomach, and used as a warm compress on irritated skin.

    Measure

    One heaped teaspoon of whole flower heads per cup.

    Pour

    Freshly boiled water, just off the boil.

    Cover

    Cover the cup. Chamomile's oil is volatile — uncovered, most of it leaves with the steam.

    Steep

    Ten minutes. Strain the flowers out fully.
